- 2 handful crunchy salad leaves (washed and cut)
- 200 – 250 g cooked Butter beans (preferred) or 1 can Butter beans (drained and rinsed)
- ½ red capsicum (washed and cubed)
- 8-10 Brazil Nuts
- ½ Tblsp cold pressed olive oil
- 1 Tblsp lemon juice
- Ground pepper for taste
