Healthy Butter Bean & Brazil Nut Salad Lunch

Hi everyone,

Let me share a simple, tasty and health boosting salad recipe with you. This one is perfect for a quick lunch break.


  • 2 handful crunchy salad leaves (washed and cut)
  • 200 – 250 g cooked Butter beans (preferred) or 1 can Butter beans (drained and rinsed)
  • ½ red capsicum (washed and cubed)
  • 8-10 Brazil Nuts

For dressing:

  • ½ Tblsp cold pressed olive oil
  • 1 Tblsp lemon juice
  • Ground pepper for taste

Mix all well and enjoy!

Remember, take care of your body – it’s worth it!
