Hi everyone!

Try this one:

Chickpea and Cabbage Salad

All you need is:

  • Lots of red and white cabbage (each about ¼ of a medium cabbage)
  • 1 or 2 carrot

  • 1 can of chickpeas
  • Your leftover lettuce leaves and/or some cucumber
  • A large bowl to mix it in

For dressing:

  • 2 tbl spoon Tahini (unhulled preferred)
  • 2 tbl spoon water
  • 1 tea spoon honey
  • 1 tea spoon curry powder
  • Some lemon juice
  • Ground pepper

What to do?

  • Wash cabbage and cut in biteable pieces
  • Wash the carrot. Slice it and cut the slices in thirds
  • Wash and slice the celery
  • Wash and cut your cucumber and lettuce
  • Drain and rinse the chickpeas
  • Mix it all up in the big bowl

Add dressing:

  • Mix all dressing ingredients in a small jar
  • Season with lemon juice and ground pepper
  • Add to salad and mix well
