Simple and Slimming Mediterranean Vegetables

Hello everyone!

We often hear that Mediterranean food is good for our health. I personally think that this is due to it’s high vegetable content.

We can’t deny the fact that vegetables are full of vitamins, water and minerals which is exactly the stuff that our body needs to stay healthy, keep functioning properly and fight all those common, ugly and nasty diseases including cancer.

Here we go … another fantastic, healthy, low calorie and slimming recipe!

Remember: I love simplicity – so even if it may look complicated – This is brilliant and very simple!

Take for 2 people:

·         1 red capsicumCapsicum_Sandy Bröcking_Think Smart and Lose Weight

·         1 yellow capsicum

·         200 g pumpkin

·         3 medium size potatoes

·         ¼ cauliflower

·         8 cherry tomatoes

·         1 red onion

·         1 pack frozen spinach

·         3 garlic cloves

·         Rosemary

·         Grape seed oil

·         Baking tray with baking paper

·         1 clear fruit plastic bag

Step 1:

Preheat oven – on 200 C.

Wash and cut potatoes in 2 cm cubes.

Peel and cut onion in large pieces.

Add all to plastic bag and add very little grape seed oil.

Add rosemary and shake well.

Spread all over the baking tray and bake for 10 mins.

Wash remaining vegies.

Cut all into 2 cm pieces.

Add to plastic bag and add very little grape seed oil.

Add crushed garlic and shake well.

Add to baking tray and cook for another 10 mins.

Step 3:

Heat up spinach in saucepan

Add to baking tray and briefly bake for another minute or two.

Serve immediately and enjoy!

Although I do very much prefer coconut oil for cooking. The grape seed oil and “plastic bag” idea makes my life very simple.
