Healthy and Low Calorie Eggplant Burger

Hello everyone!

What about creating a much healthier option of the “standard often fatty and high calorie burger” which makes you help shed some kilos as well.

Here is what you need: (for one)

  • 1 wholemeal rollEggplant Burger_Think Smart & Lose Weight_Sandy Bröcking
  • Tomato paste
  • Tahini (sesame paste)
  • 2 large slices eggplant (washed)
  • Mixed lettuce (washed)
  • 1 Tomato (washed and sliced)
  • Basil leaves

Slice the bread roll in halves. Use some tomato paste and Tahini as spread for both halves. Add plenty of mixed lettuce leaves, tomato slices and basil leaves on both halves. Top both with a slice of eggplant.

Enjoy!

Do burgers always have to be cooked? I don’t think so! Especially veggies often lose valuable nutrients when cooked.

If you need your burger cooked, grill or bake the eggplant slice, add some herbs on top if you like, use the cooked eggplant as your burger patty and the second half of your roll on top.
