Chickpeas & Veggie Bowl

Hi everyone,

Treat yourself with this delicious dinner option … and lose weight at the same time!

For a single person take:

  • 1 can chickpeas drainedChickpea & Veggie Bowl by Sandy Bröcking - Think Smart & Lose Weight
  • 1 small handful diced pumpkin
  • ¼ cauliflower (washed and cut)
  • 11/2 large carrots (washed and sliced)
  • 1 large handful Wombok / Chinese Cabbage (washed and cut)
  • 1 Tbl spoon sesame oil
  • 1Tbl spoon water
  • Ground pepper
  • 1 teaspoon curry powder

How easy is this:

  • Throw all veggies into a big cooking pot
  • Steam or cook the lot (no more than about 6 minutes)
  • When hot add the drained chickpeas and let them heat up
  • Drain and poor into a large bowl
  • Add sesame oil, water, curry powder and pepper
  • Mix well
