What about a quick and healthy, low calorie and slimming salad dinner after the usual “food-heavy Christmas and New Years” episode.
1 cucumber washed and cut in pieces
2 tomatoes washed and cut in small pieces
2 carrots washed and cut in small pieces
1 can beetroot sliced and cut in small pieces
Mix all ingredients in a bowl, sprinkle sunflower seeds on top, add some sesame oil and ground pepper for taste.
Serve with a brown roll or some brown rice for a delicious and easy made healthy lunch or dinner.
